Boutique Hotelier Highlights Faber's Repositioning of Salthouse Harbour Hotel's Food & Beverage Experience

When hotels invest in their food and beverage offering, success depends on more than creating an attractive interior. It requires a clear commercial strategy, a compelling guest experience and a distinctive identity that encourages both hotel guests and local visitors to return.

That's exactly what Boutique Hotelier explored in its recent feature on Faber's transformation of Salthouse Harbour Hotel, highlighting how the redesign has helped reposition the hotel's bar and restaurant as destinations in their own right.

Reimagining Hotel F&B

Located on Ipswich's historic waterfront, Salthouse Harbour Hotel has long been recognised as one of Suffolk's leading independent hotels. As guest expectations continue to evolve, the opportunity was to strengthen the hotel's food and beverage offer, creating spaces that would attract not only residents but also the local community.

Working closely with Gough Hotels, Faber developed a complete hospitality design strategy encompassing interior architecture, branding, guest experience and commercial planning.

Rather than approaching the project as a cosmetic refurbishment, every design decision was made to improve both the customer experience and the operational performance of the business.

Unlocking the Potential of Existing Space

One of the most significant interventions was the transformation of the former hotel lobby into a dedicated destination bar.

Previously an arrival space, the area has been reimagined as a vibrant social setting capable of accommodating around 30 additional guests. The change creates a stronger first impression for visitors while introducing an entirely new revenue-generating environment within the existing footprint of the building.

Within the restaurant itself, relocating the central island bar allowed the dining room to be reconfigured, creating approximately 20 additional covers and improving circulation throughout the space.

These changes demonstrate how thoughtful hospitality design can increase capacity without extending the building, helping operators maximise the value of their existing assets.

A Distinctive Identity

Alongside the interior transformation, Faber developed a refreshed visual identity that brings together the hotel's various experiences under one cohesive brand.

Inspired by the owners' extensive art collection, the design concept positions the interiors as an extension of the gallery itself. Commissioned artwork, sculptural forms, carefully selected materials and bespoke detailing combine to create an environment that feels contemporary, layered and unmistakably individual.

A key focal point is the bespoke NaCl light installation, inspired by the molecular structure of salt - a reference to both the hotel's name and Ipswich's historic connection to the waterfront. Suspended above the dining space, the installation acts as both artwork and architectural centrepiece.

Designing with Commercial Thinking

The Salthouse project reflects Faber's belief that successful hospitality design should balance creativity with commercial performance.

Interior design, branding and operational planning were developed together to ensure every element contributed to the hotel's long-term ambitions. The result is a collection of spaces that support higher occupancy, improve guest flow and encourage longer dwell times while delivering a more memorable experience for visitors.

It's an approach that continues to shape many of the hospitality projects we undertake across hotels, restaurants and bars throughout the UK and internationally.
